Las Casas unveils new food offers, introduces Executive Chef

Chef Dionisio Punongbayan and his Blackened Tuna

Las Casas Filipinas de Acuzar has officially added a flavorful twist to its traditional gustatory delights with its new lineup of food offers.

Hotel guests may now enjoy the new items ranging from salad, appetizer, main course, and even dessrt in their Western restaurant named Café Marivent at Casa New Manila.

Chef Dionisio Punongbayan, heritage hotel’s Executive Chef who joined the team in June 2019, has one primary goal – to create a unique and remarkable taste that is connected with the experience the place has to offer.

Four months later, he is successfully bringing fusion to Las Casas’ local flavors whilst adding his personal and sophisticated techniques to his culinary creations.

As the captain of Las Casas’ kitchen, Chef Dan spearheads the operations of the property’s dining venues namely Café Marivent at Casa New Manila, Italian place La Bella   at Casa Biǹan, Filipino restaurant Cusina ni Nanay Maria at Casa Unisan, Spanish tapas bar Café Del Rio at Casa Sta. Rita, Pica-Pica and La Parilla at Plaza De Castro, and Dapitan Bar at the resort’s beachfront.

One can say that he is a kitchen veteran, but Chef Dan, who’s worked for a cruise ship for more than 27 years, admits to still discovering new techniques through the experiences of his people.

Chef Dan said, “Any of us can claim that we’re the best chef, but without a team, one kitchen would never really be successful.”

More than anything, the Bulacan-native wanted to empower each of his staff by training them. “Make sure that they undergo proper training because that will give them the boost that they need. They will feel confident and eventually would yield positive results for the company.”BLAST FROM THE PAST

Nestled at the heart of Bagac, Bataan, Las Casas Filipinas de Acuzar is the only Philippine destination that showcases the best of Filipino heritage and culture through the colorful stories as retold by Jose “Jerry” Acuzar’s collection of restored Spanish-Filipino houses.

All these unique initiatives of Jose Acuzar in line with his mission to bring Filipino heritage to greater heights has caught the attention of the international scene by being the only Philippine property to be a part of the Conde Nast Johansens Luxury Global Collection and Historic Hotels Worldwide.
