
The rich tapestry of Filipino cuisine was once again celebrated as Guevarra’s by Chef Laudico, in partnership with Nutribullet, unveiled the fifth edition of Taste of the Philippines: A Global Culinary Journey. Held on September 18, 2025, in San Juan City, the event highlighted the talent of two Australia-based chefs, Marc Nacua and Princess Anne Uy, whose careers embody the evolving story of Filipino food on the world stage.

For celebrated pastry artist Marc Nacua, the Manila showcase was a homecoming of flavors. Having honed his craft in Melbourne’s Crown Casino and currently working with dnata Inflight Catering, he is recognized for blending Filipino inspirations with global culinary artistry.

His accolades speak volumes—Dessert Champion at the 2024 World Food Championship – Australia and Top 7 at the World Food Championship in Indianapolis, USA. Guests at Guevarra’s were treated to his signature creations such as Dried Mango Rum Baba and Piñacolada Pavlova, desserts that honor local ingredients while elevating them to world-class presentation.

Meanwhile, Chef Princess Anne Uy brought her dynamic flair forged from years in Melbourne’s fine dining and stadium catering scene, where she led food operations for world tours of Lady Gaga, Nicki Minaj, and U2. Her recent recognition at the Bocuse d’Or Australia and the World Food Championship in Dallas cements her reputation as a rising global force.

At Guevarra’s, she impressed with inventive takes on Filipino staples—Umami Lechon Belly Roll, Prawn Toast Kare-Kare Bonito, and Chicken Moringa Chawanmushi—each plate reflecting her unique blend of Filipino heart, Japanese precision, and modern Australian creativity.

Both chefs emphasized that their culinary journey is rooted in pride for their heritage. “This event is about showing how Filipino cuisine can stand proudly on the global stage,” said Uy. Nacua echoed this sentiment: “Every dish is a celebration of resilience, warmth, and creativity—the essence of being Filipino.”

By featuring these two innovators, Taste of the Philippines continues to prove that Filipino food is not only timeless but also boundless, capable of inspiring chefs and diners across cultures and continents.
