Culinary Journey Takes Flight at Grand Hyatt Manila

Singapore Airlines (SIA), in partnership with Mastercard and Grand Hyatt Manila, has introduced a new dining experience that brings together international flavors, cultural storytelling, and exclusive travel-inspired rewards through Culinary Connections. Running from August 6 to October 5, 2026, the limited-time culinary showcase invites diners to experience signature dishes inspired by destinations across Singapore Airlines’ extensive global network, all at The Grand Kitchen in Grand Hyatt Manila.

The launch gathered representatives from Singapore Airlines, Mastercard, Grand Hyatt Manila, and the Embassy of Singapore, highlighting the shared vision of celebrating cultures through food. More than simply offering an international buffet, Culinary Connections aims to demonstrate how cuisine can create meaningful connections between people, traditions, and destinations.

Speaking during the launch, Singapore Embassy Chargé d’Affaires ad interim Logaventhan Karuppannan noted that both Singapore and the Philippines share a deep appreciation for expressing hospitality through food and culture. He described the collaboration as a reflection of the close ties between the two nations and the universal language of good cuisine.

Mastercard Philippines Country Manager Jason Crasto said the partnership also reflects the company’s commitment to creating meaningful experiences beyond secure and convenient payments. By combining dining, travel, and exclusive rewards, Mastercard aims to offer cardholders added value that transforms ordinary moments into memorable experiences.

At the heart of Culinary Connections are specially prepared dishes crafted by the culinary team of The Grand Kitchen. Each recipe pays tribute to destinations served by Singapore Airlines while showcasing authentic flavors and local culinary traditions.

Among the featured specialties is Otak-Otak, a beloved Southeast Asian delicacy made with seasoned fish blended with coconut milk and spices before being wrapped in banana leaves and grilled or steamed. This version incorporates aromatic curry paste, delivering flavors reminiscent of Singapore’s vibrant hawker centers and bustling street food scene.

Guests can also enjoy Mee Pok, a popular noodle dish featuring flat yellow egg noodles tossed in a flavorful spicy-tangy sauce. Combined with mushrooms, bean sprouts, ground beef, and squid balls, the dish offers an exciting mix of textures and savory flavors that reflect Singapore’s multicultural culinary heritage.

Representing local Filipino cuisine is the innovative Octopus Adobo, which reimagines the country’s iconic adobo by pairing tender octopus with the familiar soy sauce, vinegar, garlic, and spices traditionally associated with the classic dish. The addition of Indonesian sambal introduces a spicy twist, creating a fusion that reflects the region’s shared culinary influences.

The collaboration also gives diners access to exclusive promotions designed for Singapore Airlines passengers, KrisFlyer members, and Mastercard cardholders. Eligible Singapore Airlines customers who purchased their tickets using Mastercard may enjoy special “Dine for Two, Pay for One” offers at The Grand Kitchen.
